GRILLED CHICKEN STIR FRY

Serves 4

  • 600 g of chicken breast ( no skin)
  • 2 tablespoons olive oil
  • 2 bunches bok choy, chopped
  • 200g snow peas, trimmed
  • 2 tablespoons fresh ginger, grated
  • 1 spring onion
  • Teaspoon of sesame seeds
  • 6 garlic cloves, minced
  • 1 tablespoon tamari
  • 4 cups cooked brown rice

Method

  1. Grill the chicken breasts and then cut int strips and set aside.
  2. Add one tablespoon olive oil to a fry pan or wok and cook the ginger and garlic first.
  3. Next add the bok choy and snow peas and stir fry for a few minutes.
  4. Add the chicken strips to the pan, add the remainder of the oil and tamari. Stir-fry for a couple of minutes.
  5. Serve vegetables and chicken over brown rice.
  6. Garnish with sesame seeds and chopped spring onion.
