GRILLED CHICKEN STIR FRY
Serves 4
- 600 g of chicken breast ( no skin)
- 2 tablespoons olive oil
- 2 bunches bok choy, chopped
- 200g snow peas, trimmed
- 2 tablespoons fresh ginger, grated
- 1 spring onion
- Teaspoon of sesame seeds
- 6 garlic cloves, minced
- 1 tablespoon tamari
- 4 cups cooked brown rice
Method
- Grill the chicken breasts and then cut int strips and set aside.
- Add one tablespoon olive oil to a fry pan or wok and cook the ginger and garlic first.
- Next add the bok choy and snow peas and stir fry for a few minutes.
- Add the chicken strips to the pan, add the remainder of the oil and tamari. Stir-fry for a couple of minutes.
- Serve vegetables and chicken over brown rice.
- Garnish with sesame seeds and chopped spring onion.
