Her 31-year-old female co-worker was arrested by police.
She was taken to Day St Police Station and charged with cause wounding/grievous bodily harm to person with intent to murder, and assault occasioning actual bodily harm.
She was refused bail to appear before Parramatta Local Court on Sunday.
Chief Inspector Gary Coffey said the alleged victim was awaiting surgery due to the extent of her injuries, saying the situation could have had a much different outcome.
“We pay tribute to the co-workers who intervened, because the situation could have been a lot worse than what it is,” he said.
A 27-year-old female worker was also injured trying to disrupt the alleged attack.
She suffered minor injuries and was also taken to St Vincent’s Hospital in a stable condition.
A security guard on scene also assisted.
“It’s a very serious matter,” Coffey said.
Police alleged the altercation took place in a back-of-office area, away from public view.
A motive is still being determined, however, police are inquiring into a possible work dispute.
The alleged offender was not known to police.
Hotel reception was shut for several hours, causing some disruption to guests, police said.
