INGREDIENTS:

Taco Shells:

3 nori sheets

1 cup cooked sushi rice

2 tbsp Mingle Furikake Seasoning

Filling:

200g salmon sashimi, sliced

½ avocado, sliced

2 tbsp chives, finely chopped

½ tbsp Mingle Furikake Seasoning (extra, for topping)

Sweet Chilli Mayo:

¼ cup mayo

¼ cup Mingle Sweet Chilli Sauce

1/2 tbsp rice wine vinegar

½ tbsp sesame oil

METHOD:

  1. Place sushi rice in a large bowl and mix through the furikake seasoning.
  2. Fold nori sheets in half, then cut into circles. Evenly spread seasoned rice over each circle, pressing gently to help it stick.
  3. Fold into taco shapes and place in the air fryer at 180°C for 15 minutes, or until crispy.
  4. While the tacos cook, whisk all sweet chilli mayo ingredients together in a small bowl until smooth.
  5. Fill each crispy taco shell with salmon sashimi and avocado slices.
  6. Drizzle with sweet chilli mayo, then top with chives and extra furikake.
