Lu’s understanding of Vietnamese food culture began with his grandma (who has now passed) who first thought him to cook, alongside his uncle.
Today, Duncan is showing how to make something a little different - an Italian inspired garlic and butter spaghetti. Duncan adds a secret ingredient – his new anchovy butter.

Anchovy Butter Spaghetti
Ingredients
250g spaghetti95g Anchovy salt butter2 cloves garlic, finely sliced1 small red chilli deseeded or ¼ teaspoon chilli flakes1 teaspoon capers½ teaspoon anchovy salt1 tablespoon parsley, roughly chopped
Method:
- Boil pasta in a pot of salted water until almost al dente.
- In a large pan add 50g anchovy butter, garlic, chilli and ½ teaspoon anchovy salt and warm gently on low-medium heat.
- Add capers and parsley and continue to warm through gently for 1-2 mins.
- Add spaghetti, a ladle of pasta water, 45g anchovy butter and toss until emulsified
- Serve immediately
