Whipped triple cream brie, sour honey, truffle
1 small loaf day old sourdough
Extra virgin olive oil
3 x 600g triple cream brie, chilled
1 recipe sour honey (below)
1 black truffle
Method
Cut away the crust from the sourdough and tear into large chunks. Drizzle with olive oil, sprinkle with sea salt and bake at 180C until crispy and golden. Meanwhile, remove the white mould from the chilled wheels of brie then allow the cheese to come to room temperature. Blitz in a food processor until smooth and creamy. Spread out onto a plate drizzled with the sour honey and festooned with shaved truffle. Serve with torn sourdough croutons.
Sour honey300g honey
80ml apple cider vinegar
2 sprigs rosemary
1 tsp soy
1 tsp mirin
Sea salt
Method
Place all the ingredients in a small pot over a medium heat then set aside to infuse until cool
