Today, Stacey will be showing how to make an entire roast chicken dinner in the slow cooker (including chicken, potatoes and veg + how to use the pan juices to make the best ever gravy).

Slow cooker chicken baked dinner

SERVES 8 | SLOW COOK: LOW 8 HOURS OR HIGH 6 HOURS

Into the Cooker –

Onto the Chicken:

  • 1 large whole chicken
  • 1 lemon, juiced + the halves popped inside the chook
  • 1 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp Italian mixed herbs
  • 1 tsp salt & pepper

Rest of the Cooker:

1 onion, roughly chopped

4 cloves garlic, minced

2 carrots, chopped into 5cm chunks

1 kg baby potatoes

1 tsp salt & pepper

Spray of olive oil

To Serve:

  • 500g green beans
  • 1 tbsp tapioca or cornflour

STEP 1: Toss the onion and garlic into the bottom of your slow cooker. They’ll melt down under the chicken and make the most lush base for the gravy.

STEP 2: Sit the whole chicken on top. Rub over the herbs. Then pour the lemon juice over the top and stuff the squeezed lemon halves inside the chook.

STEP 3: Scatter the potatoes and carrots around the chicken. Spray the whole lot with olive oil and give the veggies a sprinkle of salt and pepper too. Cook on high for 6 hours or low for 8.

STEP 4. Drain the liquid from the slow cooker and pour it into a saucepan. To do this, hold the slow cooker insert with a tea towel and slide the lid a bit to let the liquid out.

STEP 5. Whisk in the tapioca flour to the liquid to thicken it into a gravy. Keep simmering until it’s rich and glossy.

STEP 6. While that’s simmering, pop the green beans in the cooker and grill the slow cooker insert (ceramic insert only!) for a few minutes to crisp things up.

STEP 7. Once the gravy is thick and the veggies are crispy, serve it all up with that rich gravy over the top. Comfort food, done right!
