Pissaladiere

Serves 8

Ingredients:

  • 3 brown onions, sliced thin
  • 3tbsp olive oil
  • 1tbsp plain flour
  • 1 egg, beaten
  • 12 anchovies
  • 35g black olive pitted
  • 3 sprigs of thyme, leaves only
  • 1 sheet of good quality puff pastry

Method:

  1. Add brown onions, oil and pinch of salt to a medium saucepan. Cook over low heat with lid on until the onions are soft but not caramelised. Allow to cool for 5 mins off the heat.
  2. Preheat the oven to 200C.
  3. Take your sheet of pastry and lay it flat on the bench. Lightly score a 2cm border on all 4 sides.
  4. Within that border, dust with the plain flour (this will help absorb any moisture from the onions) and spread the cooked onions on top.
  5. Brush the external border with your egg wash and bake for 40-45mins or until golden and puffy.
  6. Lattice the anchovies across the tart, and place olives in between the gaps. Sprinkle with thyme and a lick of olive oil.
