Today, she will be cooking a caramelised onion and anchovy tart (AKA called Pissaladiere in Italian).

Pissaladiere
Serves 8
Ingredients:
- 3 brown onions, sliced thin
- 3tbsp olive oil
- 1tbsp plain flour
- 1 egg, beaten
- 12 anchovies
- 35g black olive pitted
- 3 sprigs of thyme, leaves only
- 1 sheet of good quality puff pastry
Method:
- Add brown onions, oil and pinch of salt to a medium saucepan. Cook over low heat with lid on until the onions are soft but not caramelised. Allow to cool for 5 mins off the heat.
- Preheat the oven to 200C.
- Take your sheet of pastry and lay it flat on the bench. Lightly score a 2cm border on all 4 sides.
- Within that border, dust with the plain flour (this will help absorb any moisture from the onions) and spread the cooked onions on top.
- Brush the external border with your egg wash and bake for 40-45mins or until golden and puffy.
- Lattice the anchovies across the tart, and place olives in between the gaps. Sprinkle with thyme and a lick of olive oil.
