Since then, she has appeared on a number of TV shows including Everyday Gourmet and 10 Minute Kitchen.

Her mother and father migrated to Australia 45 years ago from Greece and she loves cooking delicious Greek food.

INGREDIENTS

6-7 skinless chicken thighs

4 leeks

1 tsp garlic powder

1/2 cup cream

1/2 cup grated parmesan cheese

2 tbsp cornflour

1/3 cup water

1 tsp wholegrain mustard

12 sheets filo pastry

80g unsalted butter (20g +60g)

Olive oil

Salt and pepper

Method

  • Dice chicken into bite sized pieces and cut the leeks approximately 1cm wide.
  • Sauté the leeks on low heat in a knob of butter and olive oil for approx. 4 mins.
  • Add diced chicken and season with salt, pepper, and garlic powder. Turn the heat up to medium
  • Add the wholegrain mustard
  • Mix the cornflour and cold water together to make a slurry and add. Cook for a minute before adding the cream and parmesan cheese.
  • Stir well and take off the heat
  • Melt the butter in a small pot
  • Lay out the filo pastry sheets and brush with butter
  • Scrunch the pastry keeping the buttered side up until the top is covered
  • Bake in a pre-heated 190°C oven until golden and crispy for approximately 20-25 mins
  • Serve with a simple green salad and enjoy
